Polynesian Style Traditional Tapioca Recipe (Manioca, Yuca, Mandioca)
This Samoan traditional dessert can be cooked in different ways. Everyone has their way of cooking and preference of taste.
Cassava (Manihot esculenta), also known as manioc, tapioca, yuca, and mandioca, is a domesticated species of tuber, a root crop originally domesticated perhaps as long ago as 8,000-10,000 years ago, in southern Brazil and eastern Bolivia along the southwestern border of the Amazon basin.
Ingredients
• 2 cups of Tapioca Starch or Powder
• 1 litre carton of coconut milk
• 2 cups of brown sugar
• 1 litre carton of coconut cream
Steps
1. Heat up the rock outside on the bbq
2. Mix coconut milk and 2 cups of tapioca powder together
3. Keep whisking until the powder Is fully dissolves in the coconut milk
4. On a medium low heat bring it to a boil and keep stirring until it starts to form into a jelly form
5. Once the coconut milk is boiled and fully absorbed into the tapioca a powder,
6. Turn oven off and let it sit to cool down
7. Slowly add small portions of the tapioca jelly into the coconut cream and keep stirring to mix well.
8. Enjoy it warm or gold
