ANGOSTURA COLADA
5 drops saline
½ oz acid adjusted pineapple (lime)*
1 ½ oz pineapple
1 ½ oz coconut mix**
½ oz Smith and Cross
½ oz Coruba
1 ¼ oz Angostura bitters
-flash blend with 8 oz crushed ice
-pour over 8 oz crushed ice and 3 small cubes into a goblet
-garnish with nutmeg, pineapple wedge, and pineapple leaves
ACID ADJUSTED PINEAPPLE*
Per 100mL of juice add
3.2g citric acid
2g malic acid
-combine into a quart
-blend until dissolved
COCONUT MIX**
425g Coco Lopez
142g coconut milk
-Mix ingredients together until uniform, with a hand blender or whisk
