#Chocolate Cake "Prague" #Cake “Prague” classic recipe from the Czech Republic
I want to share a recipe that has received praise even from the toughest critics!
It was a simplified version invented by Vladimir Guralnik, the pastry chef who worked as the director of stores at Moscow's "Prague" restaurant. Vladimir is known as the author of more than 30 authentic cake and dessert recipes. Guralnik learned the secrets of pastry art from masters from Czechoslovakia who came to Moscow to exchange experiences. The predecessor of the dessert is the Austrian cake "Sacher".

Net weight of the cake - 1200 g.
For the sponge cake:
6 eggs
175 g sugar
1 pinch of salt
1 vanilla
140 g flour
28 g cocoa
47 g butter

For the syrup:
200 g sugar
200 g water
2 tbsp cognac or rum
-------
For the cream:
140 g condensed milk
58 g hot water
1 large egg yolk
275 g butter, soft
11 g cocoa
1 vanilla

100 g apricot jam, warm and smooth
