I was dating a chick who worked at the BBC, her fav music artist was Miles Davis and she took me out to watch the documentary/movie Scratch at the cinema. I still miss her

Correct me if wrong, he didn't use drum machines on this record ever drum beat was sampled from different sources.

I think he usually sampled each hit of the original break individually and used it to to play a new beat on the MPC. If you listen to the original break used on this track Frankie Seay & the Soul Riders - Soul Food, you can hear it has the same kit and a similar rhythm but is much more off beat.
