Ingredients:
🥣 300 g of buckwheat
🧅 1 small onion (finely chopped)
🥕 1 small carrot (grated)
🥚 2 eggs
🍞 75 g breadcrumbs
🧂 3/4 teaspoon salt
🌶️ 1/2 teaspoon black pepper (to taste)
🌿 3 tablespoons chopped parsley
🥄 3+1 tablespoons of oil (3 for frying, 1 for mixing)
Instructions:
🍲 Boil buckwheat
🥄 Put 300 g of buckwheat in a saucepan and add 600 ml of water.
🧂 Add a pinch of salt and cook on medium heat for 15-20 minutes or until the buckwheat softens completely.
🔄 After the buckwheat is cooked, drain the excess water and let it cool.
🧅🥕 Fry the onion and carrot
🔥 Heat 1 tablespoon of oil in a pan over medium heat.
🧅 Add 1 small chopped onion and 1 small grated carrot.
🍳 Fry them for 5-7 minutes until they become soft and slightly golden.
🌡️ Turn off the heat and let them cool a little.
🥣 Mix the ingredients
📦 On top of the boiled and cooled buckwheat, add 3 eggs.
Use a vertical blender to mix the composition well, until it becomes homogeneous
🥣 After the buckwheat and eggs are well mixed, add the fried onion and carrot, 2 tablespoons of cream, 3/4 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 paprika and dried garlic to taste and 3 tablespoons of parsley minced.
🔄 Mix all the ingredients well until the composition becomes homogeneous.
👐 Model the stubble
✋ With slightly moistened hands, take a small amount of the composition and form balls.
🔄 Flatten them slightly to give the shape of a burn. Continue until you have used all the composition.
🍳 Fry the scallions
🥣 Prepare the breadcrumbs: Place the breadcrumbs in a large bowl.
🍽️ Pass the rusks through the breadcrumbs: Take each russet and pass it through the breadcrumbs, making sure it is evenly coated. Put them on a plate.
