Can you improve your backyard ribs by injecting them? Steve Gow from @smoketrailsbbq tests out several different methods of injecting ribs and finds one clear winner.
Injected BBQ Ribs by @smoketrailsbbq
TOTAL SERVINGS: 3
PREP TIME: 30 min
COOK TIME: 24 hours (4 hrs smoking, 18 hr hold, 2 hr searing and setting sauce)
INGREDIENTS:
1 rack of pork ribs
Rib injection (Kosmos Q or Butcher BBQ)
Your favorite rub (I used Oklahoma Joe’s KC Style Rub)
Your favorite sauce
1 cup clarified butter/ghee or regular butter
½ cup Bacon Up, lard or bacon fat
THE COOK (around 24 hours)
Remove membrane from bottom of ribs
Prepare injection according to directions on package and inject 1 cup of injection into the ribs
Rub ribs
Light smoker and preheat to 225 degrees
Smoke ribs for ~4-5 hours or until they reach 145-150 internal and the bark is set
Double-wrap ribs in foil with clarified butter and Bacon Up (or bacon grease)
Hold ribs at 150 degrees for 18-24 hours.
Optional: sear ribs over hot grill or griddle
Sauce ribs all over and smoke for an additional hour at 225 or until the sauce tacks up
Serve ribs hot
