Abstract:
I tested the effect of pulling chai on its drinking experience. The pulled chai was cooler and more aerated, resulting in a smoother texture and more noticeable flavours. However, I would have liked it to be warmer, possibly around 60 C. Use less pulls.
Methodology:
Grind cardamom, black pepper and cloves, add to 100mL whole milk and simmer. Brew 300mL black tea on the side (using 6g of black tea). Brew for 4 minutes using boiling water (96C at my altitude). Add black tea to spiced milk and let come to boil.
Immediately separated one sample and pulled the rest of the chai. Once pulling was complete, separated another sample. Tested them both sequentially, rinsed palate once.
