Full Recipes & Cost Breakdown (based on Dollar Tree prices)
Pierogi Lasagna $6.25 (as a main dish makes 6 servings, as a side dish makes 8 servings)
9 lasagna noodles (par boiled) $1.25
1 packet of four cheese instant potatoes $1.25
1 packet of loaded baked instant potatoes $1.25
1 bag or block of shredded cheddar $1.25
I bag or block of shredded mozzarella $1.25
To make it a main course I'd recommend adding a meat such as shredded chicken, deli ham, breakfast sausage, or smoked sausage. You can also add vegetable like chopped broccoli, spinach, etc.
Preheat oven to 350 degrees F. Mix instant potatoes with 4 cups of boiling water per package instructions. in a 9x13 baking dish, grease well with butter, shortening, or cooking spray. Spread a thin layer of potatoes on the bottom and then layer with 3 lasagna noodles, mashed potatoes, and a layer of shredded cheese. Repeat 3 times. Cover with foil and bake at 350 for 20 minutes, then remove foil and bake for an additional 15 minutes. allow to set for about 5 to 10 minutes prior to serving.
Wacky Cake (makes 8 to 10 slices) $3.75
1 box of cake mix $1.25 any flavor of choice
1 jar of frosting $1.25 (I only used half the jar, and the other half can be saved for future cakes)
Vegetable oil (necessary amount per box cake instructions)
Water (necessary amount per box cake instructions)
Vinegar-Cider or white-substitute 1 tablespoon per egg on box instructions $1.25
Optional: vanilla extract and chopped nuts. Instant coffee is a nice addition too if using chocolate cake
Preheat oven to 350 degrees F. Dump cake mix into a 9x13 baking dish (ungreased) make 3 wells in the cake, 1 large and 2 small. To the large well pour in the oil, and in each of the smaller wells add vanilla extract (if desired) and vinegar. Pour cold water over the top of the cake and stir to combine with a fork.
Bake cake at 350 degrees per the box cake instructions and allow to cool completely.
To save money on frosting, warm in the microwave until pourable so you can use less and spread it over the top of the cake. this is also helpful if you don't like a lot of frosting on your cake. Top with nuts if desired and serve.
