This has become my favorite way to make mushroom pasta. It's rustic, earthy, acidic, robust and comes together fairly quickly! You can also make the sauce in advance and leave it on the stove for later.
Ingredients
about of pound of any mushrooms, or even an assortment (white button, cremini, shiitake, maitake, bunashimeji, oyster, etc.)
about 5 medium or 2-3 large shallots, diced (or just a big onion)
a healthy glug or 2 of olive oil
3 or 4 garlic cloves, chopped
a pinch of crushed red pepper
1 or 2 sprigs of rosemary
2 or 3 sprigs of thyme
some kitchen twine (optional)
a half cup or so glug of white wine
1 (28-ounce) can of whole, peeled tomatoes, crushed by hand
1 pound of medium pasta, like fusilli, rigatoni, etc.
an optional Pecorino (or Parmesan) closer
olive oil to finish
Prep your mushrooms into big, rustic hunks. You can quarter them, rip them, slice them -- the goal is big hunks that you can spear with a noodle
Add the oil to a dutch oven or large skillet with a lid, over medium heat. Once the oil is shimmering, add the shallots and garlic and season them with salt. Once they are just starting to brown around the edges, add the chili flakes and allow them to toast for about a minute. Meanwhile, tie the herbs together with twine into a bundle, and add them to the pan. Saute for another minute or so.
Add the mushrooms to the pan and season them well with salt and pepper. Cook them until they have softened a bit and absorbed all of the moisture in the pan -- about 5 minutes. Add the white wine and deglaze the bottom of the pan.
Once the white wine has reduced by half, add the tomatoes, season them with salt and pepper and bring it to a simmer. Simmer the sauce, covered, for about 30 minutes.
Meanwhile, cook the pasta in well-seasoned boiling water until Albert Dente. Transfer the pasta, drained, to the finished pot of sauce and allow them to simmer together for a minute or so, until well combined. Season to taste with salt and pepper and serve immediately, topped with freshly grated cheese (if using) and olive oil.
