I've had oxidation issues even with bottle conditioning. Mostly because of my bottling process, I think. Syphon to a bucket to mix in dextrose, then syphon into bottles. I added a tap to my bottling bucket, and that helped some. I think going straight from the fermentor to bottles would be even better. I have an Anvil brew bucket coming (once they are back in stock), so that should help with that. I'll just switch to carbonation drops / tablets, so I can bottle right from the fermentor.

I think your O² issue might have to do with your transfer from the small fermenters to the keg. Then you said the same thing. Your bottling process is probably much more gentle.

Make a lambic with them old hops!!!!

I have hops that are years old been saving for a lambic...maybe it's time!
