Recipe:
188 g cake flour
1 tsp each baking powder, baking soda, cinnamon; 1/4 tsp nutmeg
1/2 teaspoon salt
346 g mashed bananas
85 g butter
200g granulated sugar and 135 g DB brown sugar
3 eggs
1 tsp vanilla
330 ml buttermilk
Mash the bananas.
Whisk the flour, baking powder, baking soda, cinnamon, and salt together.
beat the butter on high speed until smooth and creamy-about 1 minute.
ERROR IN VIDEO. PROCEEDED ANYWAY. LOL.
Add both sugars and beat on high speed for 2 minutes until creamed together.
Add eggs, beat in vanilla, vanilla, beat in the mashed bananas.
add dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not overmix.
* Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
* Remove from oven and tomwire rack. cool completely.
Refrigerate
Ice, frost, when chilled
