I find it funny that those old customers complain about his not "tasting like his dad's version" but forgot that without his effort and time to learn the skill and take over this business, there would be none in that entire area. Culinary arts is past down. So easy in this day and age for it to go missing and be gone forever......

I was fortunate to taste them as a kid in the 80's in Toronto on Chinese News Years at a food stall. This Chinese snack is indeed becoming rarer by the day, as the chefs retire without trained apprentices.

I agree with him, you cant replicate another chef as its practically very hard for another chef to replecate the style from original chef unless you have training from a very young age. Its just like when you are making one of your grandma's or grandpa's recepies. Its the same dish, the same way as how grandma or grandpa will make, it taste is the same but somehow its off like its missing something.

I was lucky enough to try some 15 yrs ago when I was visiting Hong Kong & randomly saw a small stall pulling dragon beard candy. It was ethereal & wished I had bought a whole box.

When mr Yuen eat the candy, you could see he take pride making them even with a history of failure, he keep strive to a better chef. Thats a whole lot of emotion for a bite.

Awesome! Today, there is mostly factory foods and sweets. It's good to see you can still get something made lovingly by hand. China is full of surprises. We hope such skills will endure. In the robot age, they will be the real treasures of civilization.

We call this buddi ke baal(old lady's hair) in India and I used to love eating this as a child, I will surely try more of it if I ever get the chance 👍😊

This is the same as other candies (Grandma's hair) in other asian countries but this origin as Chinese dessert. This is not the same as Turkish Pismanye (different ingredients/recipe) though the technique is similar.

I agree, religion has been so suppressed because of the CCP. I’ve always been confused about my religion growing up because most of my fam performs buddhist rituals and then they’re like “i’m not religious tho”

The comments from the older customers is honestly such an old asian person thing to do. My parents do it and my older uncles and aunts do it. It's incredibly annoying and it honestly feels like they can't compliment your work without comparing you to someone else 😭

Reminds me of a quote from Jiro Dreams of Sushi about how Jiro's son would need to be 200% better than Jiro to be considered his equal (or something like that). Nonetheless this dragon beard candy son is my winner for being the only store left in Macau! Would love to try

I think it's a bit different. Because rambut nenek using sugar from sugarcanes, while dragon beards using corn syrup. Corn syrup make the strands more smooth.
