Welcome to the steakager family Jaxx and thanks for the mention brother, I appreciate it. 45 days is really good, but I honestly think that 30 days is perfect. Less weight loss, and at today's beef prices, I"m all for that. You still get very similar results, in my humble opinion LOL

Great Video. Stumbled on it as i'm researching doing a DIY with a beverage cooler or just got all in for the Steakager for $1350 usd and don't have to mess with all the extra wiring, fan, humidifier. Have you considered a diy? Would your prefer to do Steakager Pro 40 if you can do it all over again? Thanks

Yes I would.. I have considered DIY before. That being said It would have cost more for me in the end to have a designated ager. I'm not against DIY or anything I just prefer the Steakager.

What temperature do you recommend setting it at? Does the temperature matter as to how many days you dry age or how fast it dry ages? I was looking to dry age the 16lb strip loin that I put in on Sept 25th for 35 days. Its now Oct 6th (under 14 days) and the loss is visible. The bark is extremely visible and the smell is amazing. Originally when I put the strip loin in the steak ager I set it at 37 degrees. Then a few days later set it at 38 degrees, then 39 degrees. Since Oct 2 its been at 40 degrees. If Im not mistaken Steak Ager recommends to set it at 40 degrees saying that the temperature drops lower. So 40 degree is actually 1 to 2 degrees cooler. 39 degrees is 1 to 2 degrees cooler and so on. Am I correct or did I misunderstand? I am also looking to put in a 18lb brisket and dry it 45 days for thanks giving. Do you think the two different meats need different temperatures or is there a good middle ground for both? Or should I just leave it at 40 degrees for both cuts and leave it alone?

I leave it at 40° F myself . AND i would do brisket at the same temp. I think the 40 degree temp is the all around best temp for dry aging.

As long as your average on the steak ager app is between 34 and 38 you're good. I believe if you want to get REALLY specific, 36°F is ideal. I think I usually have my main temp at 38 or 39

Whats the largest cut of mean that can fit into the Truss Shelf? Is it as wide as the Truss Rack ( just to clarify I didnt mean width from end to end)

It's wider than the the truss rack ! , you could fit two truss racks in it side by side along with two whole ribeye cuts . it can also do a whole packer brisket or two of them side by side depending on their sizes.
