🟢食材:
排骨 700 克
剁椒♦ 50 克
豆豉 10 克
蒜頭 25 克
薑 20 克
紅蔥頭 1 個
生抽 1 茶匙
蠔油 1 茶匙
老抽 2 茶匙
糖 1 茶匙
澱粉 1 湯匙
胡椒粉、油 適量
🟢做法:
1️⃣ 將薑、蒜頭、紅蔥頭切末、豆豉可不切或略為切碎,爆香薑、蒜頭、紅蔥頭後下豆豉和剁椒,炒香備用。
2️⃣ 排骨洗淨吸乾水,放一半剁椒混合調料、1茶匙生抽、1茶匙蠔油、2茶匙老抽、少許胡椒粉、1茶匙糖、1湯匙澱粉、少許油拌勻後再鋪上剩餘的剁椒混合調料,醃30分鐘。
3️⃣ 水滾下鍋,大火蒸 10 分鐘即可。
📌備注:♦剁椒有鹹味,如果用量較多,宜先把剁椒用密篩盛載沖洗才用。
🟢Ingredients:
Pork ribs - 700g
Pickled chopped chili♦ - 50g
Fermented black beans - 10g
Garlic - 25g
Ginger - 20g
Shallot - 1
Light soy sauce - 1 teaspoon
Oyster sauce - 1 teaspoon
Dark soy sauce - 2 teaspoons
Sugar - 1 teaspoon
Cornstarch - 1 tablespoon
White pepper powder, oil - as needed
🟢Cooking Directions:
1️⃣ Finely chop the ginger, garlic, and shallot. You can leave the fermented black beans whole or chop them slightly. Sauté the ginger, garlic, and shallot until fragrant, then add the fermented black beans and pickled chopped chili stir-fry until aromatic. Set aside.
2️⃣ Rinse the pork ribs and pat them dry. Mix with half of the pickled chopped chili mixture, 1 tsp soy sauce, 1 tsp oyster sauce, 2 tsp dark soy sauce, a dash of pepper, 1 tsp sugar, 1 tbsp cornstarch, and a little oil. Then spread the remaining pickled chopped chili mixture on top of the pork ribs and marinate for 30 minutes.
3️⃣ Bring water to a boil in a pot, and steam the pork ribs over high heat for 10 minutes.
📌Note:♦ Pickled chopped chili is salty. If using a large amount, it is recommended to rinse it with a fine mesh sieve before use.
