This Indian Spiced Whole duck Roast (South Indian Duck Roast) is juicy, delicious and perfect for dinner with some Flat bread/ Nan/ Rice /Vegetable Salads/Roasted Potatoes. This is a delicious way to serve duck, the marinated duck is roasted in a delicious coconut milk gravy. This would be a perfect Duck Roast for Thanksgiving Dinner!

Ingredients
For marinating Whole duck
Whole Duck- 2.3 Kg (with skin)
Chilli powder - 2tsp
Ground black pepper- 1 tsp
Coriander powder - 1tsp
Turmeric powder- ½ tsp
Garam Masala- ½tsp
Ginger& garlic paste - 1tsp
Vegetable oil - 1tsp
Salt- ¾ tsp
For the coconut gravy
Coconut oil- 1tsp
Mustard seeds - 1tsp
Onion - 2 finely sliced
Ginger and garlic - 1/2 tsp
Coriander powder - 1/2 tsp
Pepper -1/4 tsp
Turmeric - 1/4 tsp
Tomato puree -3/4 cup(2 big tomatoes)
Green Chilli -2 (optional)
Coconut milk - 1.5 cup
Salt
How to make the Whole Duck Roast in Coconut Milk Gravy?
1. Preheat the oven to 200C/400F . Line a baking tray with foil, or lightly grease a roasting pan.
2. Discard neck from inside the cavity and remove any excess fat and leftover feathers. Or remove the skin if you prefer. Pat dry with paper towels.
3. Score the duck to get the flavours penetrate to the meat quickly.
4. Rub the marinade over the whole duck.
5. Place on the baking tray. Roast for 45 minutes.
6. Prepare the gravy - Place a large pan or wok over medium heat.
7. Add coconut oil, mustards and onion. saute onion until golden.
8. Add ginger garlic paste, saute until the raw smell goes away.
9. Add coriander powder, pepper, garam masala, chilli and saute for 1 minute over low heat.
10. Add tomato puree and (grind tomatoes) cook until the oil separates.
11. Add coconut milk and cook for 2 minutes and turn off the heat.
12. After 45 minutes of cooking take the duck fron the oven and spread the gravy all over the duck.
13. Reduce the oven temperature to 180c/350f and continue roast for 30-40 minutes.
14. Serve the whole duck roast along with the gravy on a platter.
15. Enjoy this delicious whole duck roast along with hot basmati rice, chapati, naan, roasted potatoes etc.
