Hi Steve, I’ve been doing no knead breads 11 years. You did a great job! If I may suggest. You skipped a step. After forming, fine to use parchment paper, put the whole thing in a bowl or basket, cover, for final proof. Breads take 2 rises, the bulk ferment first, form or shape, then final proof for 1-2 hrs, then bake. Hope this helps. Rob

Great video. I always bake cheesy jalapeno beer bread in my camp DO when we are camping. Instead of yeast I add baking powder and a bottle of warm robust beer. We like it with pepperoni added as well. I think I will use your method when not camping. Sure love your vids and can't wait to hear about your seasoning product.

Looks great! I have made this bread a few times. Mine is an overnight ferment. I have several cast iron pieces, but the one you show, mine is a Weber, with a glass top, had it for years. I normally use my Lodge 5 qt.

Cast Iron Cookware When I do that loaf, or plain, I follow Jim Lahey’s method. 400g flour to 300g water= 75% hydration. Less water is ok too. Too wet and it spreads. Then the initial fermentation needs to be longer. Lahey method uses 1/4 tsp yeast, but it ferments overnight. First hour, do some stretch and folds every 30 mins, to strengthen the dough. I have a 3 qt and it does come higher, but the dough is still firm. I am mixing the dough tonight for tomorrow to make this bread. Good videos to help what I mention, on KZitem, Artisan Bread with Steve. He does a lot with the Lahey method, and he does this cheddar jalapeño loaf too. You have everything good, maybe just the timing, but very important. Rob

Cast Iron Cookware Hi, I joined your CI Group. I’m also a big fan of cast iron besides being a home bread baker......lol. I’m part of other CI Groups but yours is nice and small. I posted a CI Bread there. I made Jalapeño Cheddar loaves today, but didn’t post there being it’s a CI Group, and I made these baguette style.

Jalapeno Cheesy Bread (Edited) 3 1/2 Cups of Bread Flour 3 TBL Spoons of salt 1 ½ Cups of Shredded Cheddar Cheese 2 Chopped Jalapeno Peppers (Save some sliced to place on top) Stir together and place to the side In a separate bowl Add 2 Cups of warm water Add 1 Teaspoon of Sugar Add 1 TBL Spoons of Dry Active Yeast Stir and let sit 10 Minutes Combine Ingredients into one bowl and mix by hand Cover and let sit for 1 Hour Remove and fold in Half 5 times then shape into a ball Place back in bowl, cover and let sit 30 minutes. Remove and fold in Half 5 times then shape into a ball Place on Parchment paper and paint with oil Cover top with ½ Cup of Shredded Cheddar Cheese Score an X on top and place Jalapeno slices on top Place Dough and Parchment Paper inside Preheated to 450 degrees Dutch Oven Place in Preheated Oven to 450 degrees for 30 Minutes Remove Lid and cook for 20 more Minutes Place bread on a cooling rack for 1 hour Slice and eat

I place my dough in a greased/oiled bowl to rise in. I let it rise twice for at least an hour each. After the first rise, I punch it down to release the gases and re-form it to a ball.

I put a firing strip on every stud at 16 inches apart. I try to hang my heaviest pieces as close to them as possible. So far, so good.

I haven’t made bread before but I’m gonna try this recipe later in my Dutch oven. I won’t have time to do the whole recipe at once, would it be okay to make the dough and let it rest longer, then bake it?

Your foot note mentioned adding oil. Was that before or after the top layer (1/2 Cup) of cheese? Edit: Never mind, you spoke on it. Edit: Almost seems like that extra 10 minutes would have burned the bottom, made it bitter?

Yes, I regular loaf Pan will work. The time frame may vary a little bit but you can keep an hour on it and come up with the perfect time.

I do think a over nite proof is needed the punched down. Proofed again for 1 hour before baking.

@@BloodEagle1583 you are right, I did use two teaspoons. I went to look for my tablespoon and could not find it. I suppose that two tablespoons would be quite a bit much. Believe me, I'm a lot better at reading a tape measure then I am cooking measurements.

Three teaspoons of salt would be a world’s plenty. I used 3 tablespoons and could hardly eat the otherwise delicious bread because it was extremely salty.

I liked it until the end when you started reading the St. John verse. I'm in it for the bread not the religion. Religion and politics are best left out of cooking video unless there's a warning beforehand.

Most KZitem channels are pretty much an extension of the individual that do the posting. My faith is a huge part of my life but I do not push it on others, That is why I have chosen to add it after the video has finished. I also make it a point to post scriptures that are encouraging and positive. I believe that a little encouragement can go a long way.

@@castIroncookware I respect your faith and thanks for sharing an awesome video, but for me I didn't appreciate the surprise at the end. I had already "liked" it, but felt I had to take it back -- just because I felt broadsided. Imagine someone offering food others assume is free, then at the end after everyone has eaten, they were told how much it costs. Perhaps, others know this of you, but it was my 1st encounter so I wasn't aware of it -- until the end.
