great walkthrough, many thanks! A couple of questions: how much water did you use for conversion and for sparging, and how much volume in the fermenter? Also, I didn't get what kind of yeast did you use for the fermentation? Cheers!

Hi Randy. In the first video, creating the grain bill, you had a total of 23 lbs of grains.13.8 corn/4.6rye/4.6 6 row. Then in this video, you did the recap stating 9lbs corn/2 lbs rye/2 lbs 6 row/ 6 lbs sugar. Did you just cut the bill in half (approx) due to the volumn of wash you wanted to end up with?? Thanks! Love the channel!

Larry sent me. Have not run any numbers, but was there enough diastatic power in the 6 row to convert all the corn meal and rye starches? Was the Rye malted? (I have never used malted rye.) I know the iodine test will not lie, but I have had mixed results. I have had better conversions with liquid enzymes. Alpha and gluco amylase from Pintoshine before he got shut down. The alpha amylase converts up to 190f. At 150f I pitch the Gluco amylase. Let sit overnight. When cooled to 80/90f, check Ph, Aerate & add nutrients, then pitch bread yeast. Some on HD forums say Gluco amylase will continue to convert starches to sugar when fermenting "on the grain" (the not fully cracked / non gelatinized grains) during the ferment. It's all about time in this hobby.

Why does my mash only take 4 days to ferment ? I'm doing a 5 gallon corn, barley malt with 8# of sugar, DADY yeast and 1 TBSP of fermax yeast nutrient. I seem to recall this taking at least a week not long ago.

Just imagine how good it would be if people were polite. These drums are insulated to aid the fermentation process staying consistent without sudden and drastic changes in temperature etc. Good luck finding a perfectly see-through container that does that.
