Easy and Delicious Skillet Potatoes for breakfast lunch or dinner.
Serves 2
Ingredients:
Light olive oil
2 tablespoons butter
3 large potatoes, peeled and diced into small cubes ( 2 inch approx. (4 cm).
4 sausages (your choice of type), sliced
1 cup smoked diced pancetta or smoked beacon (170-200g )
1 bell pepper (any color), diced
1 small onion, finely chopped
1 cup cherry tomatoes, halved (200g. approx.)
2-3 cloves of garlic, minced
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon dried thyme
4 large eggs (whisk them together and add salt and black pepper into mixture)
2-3 spring onions, chopped (white and green parts)
mild cheddar chesses 60 g or your favorite type
Fresh parsley or cilantro, chopped (for garnish)
Instructions:
In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced pancetta (or smoked bacon) and cook until crispy. Remove from the skillet and set aside.
In the same skillet, add the sliced sausages and cook until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add a bit more olive oil if needed. Sauté the chopped onions until they start to soften and the onions become translucent.
Then add the boiled potatoes mix well and fry for about 7-10 minutes, stirring occasionally, until they start to brown and become slightly crispy on the outside.
Add salt.
Add paprika, onion powder, dried thyme, , and black pepper to the skillet.
Add bell paper.
Stir well to coat the vegetables with the spices and fry for 3-5 minutes.
Add the halved cherry tomatoes and stir to combine all the ingredient and fry for another 3-5 minutes.
Return the cooked , sausages, and beacon to the skillet add spring onions.
Stir to combine all the ingredients.
Add minced garlic (is important to add garlic at the end otherwise you get bitter taste if you add to early).
Pour the whisked eggs into the skillet and gently mix.
Add mild Cheddar chesses 60 g or your favorite type.
If you have add fresh parsley or cilantro, chopped (for garnish).
