Instead of maple syrup, I'm going to use apple butter. I'm not contrary, I just have a couple of jars of homemade apple butter in the pantry. You are the chef of these apple fritter pancakes, but you don't mind changes your fans make.

I've been making a poor mans version of these for years, only using honey, melted butter, cinnamon and a pinch of salt. Also brilliant. May grandma alwys used to make pancakes with grated in apple. But in europe pancakes are more like crepes

These are AMAZING!!! We went apple picking and I’ve been making all sorts of apple based recipes for the past 2 weeks. This is hands down one of the best things I’ve made. Been making a very similar recipe for decades. Cosmic Crisp apples make the best pancakes! Turning things in your frying pan to make sure they cook evenly is a must and extremely easy to demonstrate.

We made these this morning and WOW were they great. Just a hint of syrup is all that's needed (in my opinion), but our son ate them with no syrup and just some butter on top. Then he said "let's make this tomorrow too".

There is a new apple (I think 3rd. season) called Cosmic Crisp. I don't know how widespread the distribution is because they can only be grown in Washington state for 10 years. If you see them you have to try them. One of the cool things about them is that they don't turn brown when peeled.

Made these today. Didn’t have the ground ginger but they were amazing anyway. Probably the best pancakes I’ve ever had. You can’t even see the apples in them by the time they’re cooked. Great recipe

Instead of syrup, use powdered sugar/water to make a donut glaze - so good, and it makes them taste like real apple fritters!

These have seriously become our go-to pancakes. They're just fantastic. But I recommend doubling these amounts for two real servings, or you're going to be staring at an empty plate and thinking: "Damn, I wish I had more of those." Current amounts make for two smallish pancakes per person. And that ain't gonna cut it, trust me. ;-)

I've been trying to figure out how to make my husband's favorite apple fritters without deep frying them! This looks like IT! Chef John, you are a genius. But I am, too : How about using a powdered sugar & hot water glaze instead of syrup, so they are "glazed" like the fritters from the donut shop? I'll try it and let you know!! EDIT: We had these for Sunday brunch, and they are so excellent!! They puffed up nice and tall, and were so tender. And, the powdered sugar glaze made them taste EXACTLY like apple fritters from the bakery, but not as stodgy and greasy. The edges were nice and crispy. They were good hot, and also good when they had cooled - in fact, I think you could taste the apple more after they had cooled some. So they would be great to make for a large group, with no pressure for everybody to get them hot off the griddle. We will definitely make these over and over. Thank you, Chef John!! BTW, I also love your beef summer sausage recipe! Definitely a crowd pleaser.

Thanks for the fritter idea, chef. I really like the Idea of a tall stack of pancakes or waffle, but the first time I dug into one, it was quickly turned into disappointment due to the monotonous nature of griddled pancake. But this? This is goood.

Great recipe. I just finished eating these pancakes with sausage. I love the contrast between the sweetness of the pancakes with the saltiness and savoriness of the sausage. These pancakes were so easy to make and contained all the satisfaction of fritters, which I also love but are more time consuming and fussy to make. This recipe is now a regular in my menu planning. I have never been a big fan of pancakes, but I decided to try this recipe. Am I glad I did! It came together very easy, and they tasted so good. I used a Honeycrisp apple (which are my favs), but think next time I will try it with a tarter apple just to see what the taste difference would be.

And along with all the vitamins minerals in those apples skins don’t forget about the delicious pesticides…yes apples are one of the highest sprayed produce so you may want to get one that’s organic.

I just tried this for breakfast. I sub lemon juice for apple cider vinegar since that’s what I have on hand. And I used Fuji apple. I like it and it’s quick to make too, but I feel it doesn’t taste as apple-y as I would have liked. The apple flavor is quite muted. Any tips to increase the apple flavor without ruining the texture? Coz I think the texture is perfect
