Ingredients:
👉1 small pepper(s) Green bell pepper (chopped into large pieces)
👉1 large pepper(s) Yellow bell pepper (chopped into large pieces)
👉1 large pepper(s) Red bell pepper (chopped into large pieces)
👉1 large Red onion (chopped into large pieces)
Gravy
👉1 medium White onion (finely chopped)
👉1 cup Raw tomatoes (finely chopped)
👉2 tsp Ginger-garlic paste
👉1 tbsp Chickpea flour
👉Dry Spice Blend
👉2 tsp Cumin (powder)
👉2 tsp Coriander, ground
👉1 tsp Cayenne pepper (adjust per taste for spiciness)
👉1 tsp kashmiri chilli (for colour or California chilli)
👉1/2 tsp Turmeric, ground
👉1/2 tsp kasuri methi
Instructions:
1.Warm up the pot or skillet on high heat. Add a drop of water, if it sizzles and evaporates quickly then pot is ready. Add the peppers, onions and start stirring. Sprinkle with broth as needed to infuse more flavor and to prevent it from sticking. If using frozen vegetables then do NOT defrost them. Stir fry until veggies are cooked but not too soft and start to caramelized. Remove it on the plate and keep it aside.
2.Rinse the skillet and save the water to add it to the gravy base.
3.Warm up the skillet and add the finely chopped onions, and tomato. Start stirring, sprinkle some broth. Once onions are soft and tomato is cooked, sprinkle in the chickpea flour with out creating any lumps. Keep crushing and mixing the flour into the onion - tomato mix. Cook for 3-5 minutes on the low flame. Sprinkle little water if needed but do not make it very thin.
4.Start adding all the spices and keep blending everything on low to medium heat. Once spices start to release the aroma, add the onion-pepper mix in. Blend everything well and cook for another 2-3 minutes. Then increase the flame to medium high and add 1-2 cups of HOT water. Adjust the quantity of the water to achieve desired creaminess and consistency of the gravy.
5.Serve hot with raw onion or lemon wedge and on the side of roti, bread, rice or potato!
