“Just use what you have” is what you always say. I had some leftover beef short ribs and zucchini and threw them into the recipe. Family loved it and we didn’t have to throw away food because everyone was sick out eating the same leftovers for three to four days in a row. You are the MAN and a great cook!!!

Let me tell you Sam, while I'm out to sea since im in the Navy, your videos really help time go by and really give me something to look forward to brother. I love this recipe and hope to make it soon. I think my favorite recipe though has to be that carne asada. I made street tacos with it and it's was just amazing. With some home made Verde. It was next level.

I'm from indonesia. I remember one time i went to authentic italian restaurant. Not the fancy one, so I'm not expecting the owner whose also the chef would be real italian. And i order pasta carbonara, expect that i would get pasta with creamy milky sauce. But what I've got was pasta with strong cheese flavor. So I asked to the chef, why it's different with the common pasta carbonara that i usually eat. And i remember how he's looks offended and it's ended with I'm getting lectured about the real italian pasta. 🤭 At that time, I'm just thinking that, WOW, I'm just asking, no need to be angry. Cos i ordered so many pasta carbonara in other restaurants and never taste something like that. Good thing is i LOVE cheese. So I'm fine with it. I was just curious, why it taste different. And now, after years then i read your comment. Now I'm sure he's telling the truth. Thank you. 😬👍

I find myself saving more of your videos to make in the future than any other cooking channel on youtube. It just comes across cleanly, most recipes are relatively simple, and you certainly make it look delicious. Keep it up Sammy boy! P.S. Make sure you are telling people to heavily salt their pasta water!!!

In some cases, yes you will heavily salt the pasta water, but pancetta is VERY salty, so in this case where you use a lot of pasta water, you don't want the water to be to salted. Happy cooking Happy 2022

I (self taught) have been telling my dad (went to CIA, and went on a food tour in Italy) that he has been making pasta carbonara wrong for years! It always comes out with egg chunks. I was introduced to this dish, by a Jewish girl, from Queens, New York City. We made it using bacon for pancetta and green peas for the parsley. It has long been traditional flavorite. Yes I went there w/ flavorite.

@Spongebob Schwanzkopf Hell I know the myths behind it but never have I seen one so twisted. For your education, the myth behind the creation of Carbonara that involves the US is this: When there was a food shortage after WW2 in Italy the US army provided food rations to the Italian citizens including egg and bacon powder. The Italian citizens then used this to create Carbonara by mixing it with Pasta Water. So even if you go by this myth (which btw. is still debated if that actually is how carbonara came to live) it's still NOT an US American soldier recipe, not even close to it. It still was invented and created by the Italian citizens, just that they used US rations for it because of food shortage. But in no shape or form was this invented by US soldiers even if you go with this myth.

I made this and it was BOMB AF! My tip. When adding the garlic. Remove it from the heat immediately after adding it. The residual heat from the pan will cook it perfectly along with the hot pasta. My first try, the garlic burned and I had to toss the pancetta and burnt garlic and start over.

ALSO, DO NOT FORGET TO ADD THE EXTRA CHEESE AT THE END! I felt like it was lacking that punch and it tasted a little bland, then I realized I forgot to add the extra cheese. Added it to the pasta on the plate and it added the perfect amount of saltiness and extra flavor!

Sam. I blame you for my sudden use of the phrase, "Look it!" Last night I had a lady at a dinner I was making who hates fish. For whatever reason she basically only likes shrimp and lobster. It is actually the reason I switched my plans from a spicy crab pasta side to a carbanara topped with blackened shrimp. I was also making fish cakes, though.... Which turned out amazing. So, while she was by the bar I went, "But, look it... Take a whiff of what is in this batter!" End result being that the woman who hated fish ate three of my fish cakes. ;)

A coworker of mine is Italian and he told me, traditionally there is pasta, eggs (only yolks), lots of salt (in pasta water), lots of pepper, guanciale (NOT smoked and even more fat) and a combination of pecorino and parmesan. He would kill you because of the garlic, but for me (german), your style is fine as well 😉

Italian here, as long as he doesn't "cheat" using cream I'm totally fine with his version. I'll never understand why americans like parsley so much on pasta but ok. Fun fact, italians treat carbonara like their mothers and say you MUST use guanciale, not pancetta, bacon even worse, you MUST use pecorino romano cheese but actually it's an american inspired dish. At the end of WW2 soldiers were here with their scrambled eggs and bacon military ration and someone made a pasta recipe out of it. :)

I like watching you cook Sam, you remind me that it should remain fun and enjoyable. Keep doing what you are doing. I am a chef and often get caught in the trappings of having to keep things “authentic/purist” that’s not what cooking is about, it’s about making people comfortable, and happy, and at the end of the day you don’t make something 100% authentic who gives a fuck! As long as it tastes good and people enjoy it that’s really all that matters. Keep it up!

This is one of the few simple pasta dishes that is so rich I can't eat a lot of it. I can usually scarf down pasta but this I can only handle one (delicious) serving so my friend lucks out when i make it cause he gets to eat the rest. I still haven't found guanciale to make it properly, maybe i'll make that a weekend mission. As for egg yolks, I saw a cooking vid a while ago and the guy did it with a bottle, it's amazing how well it works.

I loved the episode Sam! When you are describing the food, you could breakdown the flavors into the 5 tastes that we recongize - salty, sweet, bitter, sour, and umami. For example, I have seen some of your videos where you describe the acidic kick that limes or vinegars add by pointing to the top of your throat right below your chin. This would be a great opportunity to describe the flavors that an acid brings out by referencing the sour or bitter notions that are recognized. In addition to using the receptors as ways to describe food, you can use more texture words. I know you mention this Carbonara as creamy, and other foods as needing the crunch, but there are many other words. You could descibe textures as crumbly, moist, or gooey and how those create a certain "mouth feel" that elevates the dish. I think you are producing some great recipes and I hope these few tips could help you describe your food to a better degree.
