In today’s tutorial, I’ll show you how to make these super easy freezer-friendly chicken enchiladas! This is one of my go-to freezer meals to gift new moms when they are postpartum (or great to prep for yourself before baby comes!). They can go straight from freezer to oven and are a delicious crowd-pleaser. The full recipe is written below. Hope you enjoy!

ENCHILADA SAUCE:
Melt 2 tbsp of butter and 2 tbsp of oil over medium heat.
Whisk in 3 tbsp taco seasoning, then 3 tbsp of flour (or some cornstarch for a gluten free option)
Add 1 cup of chicken broth and 1 cup of tomato sauce.
Simmer 5-10 minutes until thickened. Taste and add salt or sugar as needed to taste.
ENCHILADA FILLING:
3 cups of shredded chicken (I use rotisserie)
1.5 cups of grated cheese (I used marble)
1.5 cups of enchilada sauce
Coat the bottom of your baking pan with a thin layer of enchilada sauce.
Microwave 8 tortillas so they won’t break when you roll them.
Add chicken filling down the center of the tortillas and roll to create your enchiladas.
Place seam-side down in your baking pan.
Cover all the enchiladas with remaining enchilada sauce, then top with 1.5 cups of grated cheese.
BAKE FROM FROZEN:
Bake covered at 350° F for 1 hour. Remove foil and bake another 15-20 minutes to melt cheese.
BAKE IMMEDIATELY OR AFTER THAWING:
Bake covered at 350° F for 30 minutes. Remove foil and bake another 5-10 minutes to melt cheese.
