Easy Chicken Sheet Pan Dinner with Super Easy Dessert
Chicken Dinner
Preheat the oven to 375 degrees
6 chicken thighs pat dry and then coat with a TBSP of olive oil and half the dry run. Add to a sheet pan that has a good rim on it.
Dry Rub
2 ½ tsps salt
1 tsp garlic powder
½ tsp onion powder
1 tsp black pepper
1 tsp smoked paprika
Cut up 4 medium potatoes into cubes and coat with 1 TBSP and remainder of the spice mix. Arrange on the sheet tray with the chicken thighs. Place in the 375 degree oven for 25 minutes.
While the tray is in the oven for the first 25 minutes peel four carrots and cut them into sticks. Coat with 1 TBSP olive oil and salt and pepper. Once first 25 minutes is up pull the tray from the oven and turn the potatoes making room to add the carrot sticks in a single layer. Return the tray to the oven for a further 25 minutes. Remove from the oven and turn both carrots and potatoes. Return to the oven for 10 minutes and you are done.
Impossible Coconut Custard Pie
Preheat the oven to 350 degrees.
Blend together the following (except for the coconut) in your blender at high speed for two minutes.
1 can sweetened condensed milk
1 ½ cups water
1/3 cup bisquick
3 eggs
¼ c soft butter 1 to 1 ½ tsp vanilla
1 cup coconut - I used sweetened
Pour into a sprayed 9 inch pie pan. It will be runny. Trust the process. Add the coconut to the top. Place in the oven and bake at 350 degrees for 45 minutes. Cool four hours before you try to cut it to give the custard time to set up.
