Mine is a chili recipe my dad and I both LOVE!!! We always make a big batch and keep a container in both the fridge and the freezer for later. Simple ground beef, onion, green bell pepper, a jalapeno, two kinds of canned beans, and some cheap spices and herbs. Makes for fantastic taco or burrito fillings, an addition to rice, alone or with an egg on it! Altogether the ingredients cost maybe $10! EDIT: Forgot to mention the can of diced tomatos to give it that much needed moisture and tomato zing!

Emmy I do see a mistake that will effect your finished product. The second ingredient is "1 can of chili beans" You got a can of chili WITH beans, which is unfortunately something else entirely. I would recommend remaking this and using a can of Red Kidney Beans instead! ❤

In Mexico we have our version of this, but instead of chili beans and sausage, we add chorizo, freshly cooked beans and tomatoes too, at the end so they don’t overcook. We eat this with bolillo bread or tortillas of course 😚🤌🏻

Because of the sweetness of the baked beans, my mother had a different recipe for those. Can of diced tomatoes, onions, hotdog wieners and bacon pieces (from a cheaper package of “ends and pieces”). Sprinkle with brown sugar and sugar, bake until everything is hot and melted. Not the healthiest but comfort food.

Hey, Emmymade! Love your channel. Just a note about those spikes on the underside of the lid - They can hold a big hunk of meat for you while you shred it it after you cook it in the Dutch Oven. If you are strong, you can hold with a potholder on your hand so the lid rim is over the pot then shred some off the huge hunk or take cuts out and pull them through the spikes with a fork to shred, then scoot that into the pot. If you need to, you can set the lid upside down on a nest of towels and shred with both hands, taking what you shred back into the hot pot. Then, you can stir it into the soup, stew, or juices, adding sauce as you like. Just another tricky feature the cast iron folks built in! I hope this is fun and functional for you!

I think most families have a recipe similar to this one. I personally prefer browned ground beef in mine instead of sausage and a touch of brown sugar. Any variation is a rib sticking good meal that goes great with your favorite corn bread. 👍

Most of my go-to's include doing something with leftovers, reheat and either add cheese or a can of cream of soup or eggs, depending on whether it needs some richness or just more protein. Most dishes in our house involve an onion, but the onions did not do well in my garden this year, a lot of them went mushy on me. One of the best places I've found to put onions is in between tomato and pepper plants, those often do better than onions that were planted in a row.

That looked great. But living in the Netherlands, I would have to change some things. Kielbasa would be a bit difficult to get, but we have good smoked sausages. Our baked beans are different, ours come in a tomato sauce and the chili beans are just beans with a chili sauce. It would still make a good dinner though, I'm quite sure.

Kielbasa is a Polish sausage, I’m sure you could find some in the Netherlands! I find them easily in my local shop in Ireland, although we have a large Polish population here so maybe that’s why.

@@neamhdhlisteanach6720 I live in Amsterdam, but most Poles went to different places mostly. Sure you can find Polish shops in the Netherlands, but not much within my reach. Most of them went to work in agriculture and I don't know the situation at the moment. I have a feeling a lot of them went back home, because things got better back in Poland. We've never had many of them in Amsterdam. I have found a Balkan shop nearby, but it's quite expensive. So I think I'll just stick to my 'gerookte worst' which will work definitely quite fine with it.

Oh no, Emmy! You got chili with beans, which alters the flavor of this dish SIGNIFICANTLY. You can find Chili Beans labeled exactly that at any Walmart, the Great Value brand carries them! I'd love to see you try the recipe the correct way and compare the two for us now! 😂

A solid variation I learned for this is to just cut the onions in half, leave the onion paper on it, drizzle olive oil on a good sheet pan or a foil lined sheet pan, and roast two onion halves and caramelize them the day before, also put on a few garlic cloves with the skin on the pan as well. Day you make beans take the cooled onion and garlic, remove the papery skins and chop up the onion and squeeze out the garlic into the end of the cooking of the beans with the sausage and green pepper. It adds a nice roast smokiness to the pot.

My mom has always made a similar dish, though it omits the beans. So it's just the taters, sausage, and veggies. I make it all the time now that I live on my own! Add some ketchup or ranch on top and it's sooo good!

This is so crazy to me that you're uploading this now cause yesterday morning I cooked almost the exact same dish and I say it's crazy because I completely made it up based on the only ingredients I had at home - a few cans of baked beans, peppers and onions, but instead of sausage I used salami. I'm not from the US so I haven't heard of cowboy skillet. I also seasoned with tonnes of paprika and mixed herbs, they contribute a great flavour.

one thing I learned from years of eating green peppers, was that I love four small green peppers, over one big green pepper because the smaller green pepper has a much better skin to flesh ratio.give it a try and hope it helps. the chew is less but the flavor is sweeter.

in greece we have something similar in spetsofai (no beans/no potato) : olive oil, garlic, peppers many colors, hot horn peppers, sausage, black pepper and bukovo(hot pepper flakes), tomato and/or tomato paste and you eat it with bread and feta on the side instead of putting potato in the food itself. though theres many variations from region to region it is always something like this. you can even get away with using regular hot dogs/frankfurts and just adding the heat through the spices or the very hot peppers.

I'd eat that. Love your channel. The little nubs on the inside of the lid are so you can flip it over and pile hot coals on top without them falling off, which makes it an oven with heat from below and above. The tricky part is getting the screaming hot lid off without ashes falling in the food. And yea, I don't care what Texans say, beans are just fine in a proper chili.

I grew up eating something very similar at least once a week and I return to it now even when I don't need to, just for nostalgia. I love adding diced mushrooms-- brown them first like you do the sausage so you concentrate their umami flavor. You definitely can stretch it further by putting it over a carb and that can add interesting texture too. Personally my favorite is always cornbread. I like rice too, but the flavor combined with cornbread tricks my brain into thinking we're actually having barbecue, which would be WAY more expensive than a bowl of this, haha

It's a cowboy skillet on a budget but it's got a lot of "real food" in it like beans so it's a better choice for dinner. I am on an Ezekiel Bread kick which definitely isn't for budgets but I love the stuff and it's improving my health. I have a bread machine. If you ever want to try to make Ezekiel Bread in a bread machine I would love to see a video about it!

Among the Latino community on the Texas / Mexico border, chili is traditionally made with cubed beef, simmered until very tender. It's normally eaten on plain white rice, with a bit of chopped onion, perhaps a little diced serrano or jalapeno and sometimes a bit of finely chopped cilantro. As far as I can tell the addition of beans came from the anglo population. I could be wrong, but this is what my family in Texas claims. Maybe the anglo settlers in Texas were more accustomed to beans than rice, and so they made the switch over to beans?

Hi Emmy A bit of History and Language analysis. Chile Con Carne literally means chili (peppers) with meat. There are several dishes in Mexico which have a variety of dried chilies and meat. Besides onion and garlic and tomato or tomatillo they rarely have any other vegetables. People probably added beans because it stretched the meat budget AND it tastes good. Personally if I'm going to make a savory bean dish it would have zero sugar, sofrito (mirepoix) and a variety of port meats. au natural, sausages, ham, tomato and chilies to taste (a variety). Looks yum! I wonder if it's a regional thing that you've used chili with beans where in my neck of the woods, chili beans are red beans in a spicy sauce. I think either sounds delicious.

bush's beans makes various delicious flavors of bbq beans, but (1) they're likely to be a newer product rather than an authentic old-timey "hard times" thing, and (2) they may cost more than your average can of beans, so you may not find them at the "dollar" store. so i think what you did is perfect...i love sweet baby ray's!!...just wanted to let you know because i'm a big big fan of bush's beans--esp the vegetarian baked beans.

Did you speak with Dean about the recipe? I noticed Dean said chili beans, not chili with beans. Also, Dean said kielbasa summer sausage. I'm not sure if Dean uses the word kielbasa interchangeably, because he said summer sausage too. Anyway this sounds delicious!

you gotta make hot dog stew its 1 or 2 packs of hot dogs chopped and fried in your pot then chopped some potatoes and carrots you can add onions or beans or whatever you want really then add that to pot and add a jar or 2 (to cover everything) of tomato sauce and then cook til the veggies are soft and serve its sooooooooooo good

I am also a chili purist (no beans in my chili, ever!), however my husband would LOVE this recipe! He makes something he calls "beans and brains" for himself often: ground beef, baked beans, sometimes onions, and an array of condiments (like ketchup, mustard, maybe some brown sugar, Worcestershire, hot sauce, etc.).

Emmy I know exactly how you feel about growing onions. I grew some for the first time this past year and felt so much joy when they were harvested and then done drying for storage. I grew way too many but it was fun to make friends and coworkers happy with free home grown organic onions. Have to say felt the same way about growing broccoli for the first time this past year. Was awesome!!

When I was talking to a Texan a few years ago and we were discussing food and chili came up and she said it has no beans in it me and the rest of the class were in such shock like WHAT DO YOU MEAN NO BEANS? (I guess beef and animal based products are more part of culture in Texas). For me Beans are an essential source of protein for me and I would classify myself as a flexaterian. I have definetly reducedy animal protein in my diet significantly and the main reason? Health, Costs and then Environment.

Hi Emmy, this looks delish! I'm wondering about the baked beans though, they look a bit different to the ones we get in the UK, which seem to be a different type of bean by the looks of it. Ours are really heavy on the thick tomato sauce and are more squishy. I wonder what brand you have there xx

You should try growing potatoes. They are very easy, and. just a useful as onions.
