Thanks Kevmo. I have been chilling water in the freezer so I will try cold tap water next batch. The peel after a minute in cold water worked great on a 10 or 11 minute egg.

I do it like this also, except I do not crack the shell in several places. I dump the hot water, then I run cold water in the pan with all the eggs. I then choose an egg and crack the shell once and then I proceed to take the shell off under the running cold water. Works great!

Try bringing the water to a light rolling boil first, then gently drop each egg in with a spoon being careful not to damage the shell. Boil for 15-18 minutes and then cool under cold water for 2-5 minutes. No need to crack, the eggs should all have a decent separation between the white and shell. I do this with an entire dozen sometimes and they store for weeks cooked, ready to crack and eat. I personally prefer adding the eggs after the water reaches a boil to mitigate the partial/incremental cooking process during the heat-up phase of the boil. 15-18 minutes seems to be the sweet spot for most eggs when introduced to the water once its already boiling.

I strongly disagree with the part about putting them in cold water. This causes the membrane to coagulate with the egg. Boil the water first and lots of it, so it doesn’t stop boiling. Also, older eggs peel more easily than fresh.

Another good trick is using older eggs. I live on a farm and we have to let the eggs sit for at least a week before we do this. Laid fresh that day eggs are very difficult to peel

Cracking them fully after theyre cool enough and peeling under running water is the best. The running water gets between the shell and egg and almost peels it for you.

Another cool hack is to take a thumb tack and poke a small hole on the bottom. Lets air escape and you will never have cracked, green yolks, or sulfer smelling eggs again. I learned that one from the great Jaques Pepín

I recently learned this other method where you make a lil hole with a needle at the "bottom" of the eggs. it works great :)

Another way is to steam them. 11 minutes for soft center, 13 minutes for well done. Into cold water like this - Peels like a champ! Stole this one from Alton Brown. ;)

The absolute truth. Seen people do salt, vinegar, all kinds of stuff that can work. But you’ll notice there is an inner film between the shell and the egg, and the cold water shocks that lining into not sticking to the egg. Cold water is the key my friends. And if you want a soft boiled egg, wait until the water is already simmering, drop the eggs in with a spoon and set the timer for 8 minutes instead

There’s a little pocket of air between the shell and embryo at what would be considered the “top” of the egg. Start there and keep peeling under running water. Perfect eggs every time!

its actually easier to unpeel it in the pot under the water. peel a little spot then give the egg a squish so that water gets between the shell and egg. then the egg simply pushed out the opened/ peeled end.

I eat so many eggs; I bought one of those little egg cooker-steamer things and it’s greatly improved my happiness and decreased my stress 😂 I have tried every “make eggs easy to peel” method out there, and none were consistently working for me; especially when I realized I prefer my hard boiled eggs just a touch jammy.
