Personally when I make cornbread I leave out the sugar..I don't like super sweet cornbread, my grandma never used it and she was the one who made cornbread for the big family dinners on Saturday and Sundays..her mom was even more old school and used stone ground cornmeal..but then again my grandma was born in 1941 so that gives you some context. Far as I know sweet cornbread is a family by family thing..some people like it and some people don't..my family has never been terribly fond of it.

Everything is better with bacon. I made these with bacon wrapped cocktail sausages (i.e. short hot dogs). Next time I'll put crumbled crispy bacon in the batter and use the bacon grease from cooking the bacon instead of oil in the batter. I'll also use small muffin cups instead of standard sized ones to get more of them. Win, win, win!
