How to Make Easy German Spaetzle at Home In 20 Minutes
Spaetzle is delicious. Whether you are eating it with braised meats, sausages, schnitzels or by itself, it's something that you should be making. You can make it at home in no time and add it to the dinner rotation! And my version of spaetzle made with spinach is a nice way to sneak some vegetables into your dinner!
What is spaetzle? Spaetzle is a type of dumpling from Germany that is boiled. I take it a step further and pan fry them so they are crispy, Spaetzle is different from as pasta is a dough that can be rolled out while spaetzle is a batter that is "dropped" in water. Traditionally the dough was scraped off of a cutting board into water, this is where it gets it's name, which translates to sparrow, as they sometimes looked like little birds.

Makes 4-6 servings
2c flour
4ea whole eggs
1/2c +1/8c whole milk
1/4tsp nutmeg
2tsp kosher salt
1/4tsp black pepper
1c spinach (packed cup)
1c gruyere (or any cheese you prefer)
4Tbsp butter
