Making soft and chewy bagels with hand kneading
*ingredient
-5 bagels
350g bread flour
197g water
12g sugar
6g salt
4g dry yeast
20g olive oil
-Green onion cream cheese
(If you want to spread it on 5 bagels, increase the amount)
150g cream cheese
30g honey
35g sliced ham
30g green onions
0.5 g salt
a little pepper
2g lemon juice
-Blanching water
1000g water
10g sugar
20g honey
*Oven temperature (based on the oven I use: Wiswell)
Preheat at 230 degrees for 30 minutes
Heat the top to 230 degrees, heat the bottom to 200 degrees (total of 15 minutes).
(The temperature varies from oven to oven, so adjust it to the temperature of the oven you are using)
