These homemade fudgesicles require only 4 ingredients, about 4 minutes of work, and they're dairy free (vegan, actually) and gluten free, too! Adapt these fudge pops to your tastes - add a bit of cinnamon and cayenne for a Mexican hot chocolate spin, swap almond extract for half the vanilla, or vary the amount or variety of sweetener. The amount below makes fairly bittersweet pops; use up to double for sweeter treats. No molds, no problem! Use small cups and popsicle sticks.
Ingredients:
13 oz/ 403 mL can regular coconut milk, well shaken
5 tablespoons/ 25 g cocoa powder
2 tablespoons/ 25 g granulated sugar*
1 teaspoon vanilla extract
optional additions: 1/4 teaspoon kosher salt, 1.2 teaspoon cinnamon, 1/4 teaspoon ground cayenne
Combine all ingredients in a blender and blend well. Taste for sweetness and texture; add sweetener and/or blend more as needed. Pour into popsicle molds** and freeze, about two hours, depending on the size of the molds.
*alternative sweeteners include honey, agave, or grated panela
**instead of popsicle molds, you can use small cups and popsicle sticks; freeze in cups for about 1 hour, insert popsicle sticks and freeze for another hour
