Thank you! If you add 2 tbsp of oil in the dough they will become even more fluffy, if you like ;)

Hi Marta, I am sorry I am replying so late, but I found this comment in the "spam" section, I don't know why. Anyway, if I am not too late I would suggest rice flour. I've never used it, I have to be sincere, but, at least here in Italy, the most gluten intolerant people use that as a substitute and it works pretty well according to their feedback. I have some people that I know who are experts in this field, so I will ask them and, in case they recommend other options, I will let you know!
