Hey guys! Do you want an EASY, quick meal prep lunch or dinner recipe that is SOOOO good, and good for you? This recipe was so fun and fast to make. Perfect for weekday dinners! This recipe is completely VEGAN, but don't worry - even if you are not vegan, you will LOVE this recipe! It re-heats well - so its perfect for meal prepping ✽

INGREDIENTS:
Salt and Pepper
8 oz Pasta
drizzle of Olive Oil
6-7 Baby Carrots
½ cup Raw Cashews
¼ cup Filtered Water
2 tbsp Pine Nuts
handful of Fresh Parsley
½ tsp Onion Powder
½ tsp Garlic Powder
¼ cup Reserved Pasta Water
⅓ + ¼ cup Nutritional Yeast
INSTRUCTIONS:
1. Soak raw cashews in hot water.
2. Bring water to a boil in medium saucepan. Add salt, pasta, and baby carrots, and cook according to package instructions for al dente. Reserve pasta water.
3. Drain and rinse pasta. Toss in drizzle of olive oil. Add salt and pepper. Return to pot.
4. In your Vitamix or food processor, add drained and rinsed cashews, carrots, ⅓ cup nutritional yeast, reserved pasta water, spices & salt and pepper. Blend until smooth. Pour over pasta.
5. Grind pine nuts with ¼ cup nutritional yeast. Sprinkle over pasta. Top with fresh parsley. Makes 4 servings.
