Listen, I was super cheap. I own a company and give my employees 20% bonuses for Xmas and spend $$$ on them for Xmas. I have high end designer shoes. I drive a beat up car. I refuse to buy sheets that aren’t at tj max. I swear, I’m so cheap with certain things that I asked my mom to buy me a magic bullet!! I never buy small/needed things. Anyhow, I finally caved and I bought a mixer. Amazon sells mixers at lower cost if u buy an open box. I got a 175$ mixer for 69$ bc it was open box. INVEST IN ONE. A mixer will come in handy for everything. I too use to have to stand there

I tried baking these when i was a beginner baker. Yes, a beginner with macaroons, they were PERFECT! Since then i've done a lot, LOT LOT LOT, of baking and some of your recipes look really tempting, but i never seem to find the time to make them. Hi beautygirlizzy, this video has closed captions typed in. To turn them on look on the bottom of the video, the pause & volume settings are on the left and on the right you have 'hide annotations' and then 'captions' it looks like a white rectangle with a couple of black lines. You can even choose to have them translated into another language if you need.

Hi yoo6231 I would suggest getting an oven thermometer and checking that the oven temp is accurate, if you are getting a skirt instead of a foot it usually indicates that the oven temp is too low, which would also explain why they are not cooking in that time.

Hi Cakelunatic, Icing sugar is just normal white sugar that has been ground super fine so it looks like a powder. You can use a blender to do this.

This is one of the best macaron tutorial I have ever seen. When I started making macarons it was difficult because I never knew what I needed fixing, but thanks to you I know what I need to improve on. Hi stephanie, you need to add you colour before you fold in your dry ingredients. When you are folding use a spatula rather than a spoon as it is gentler. Hi giovanna elia, a small amount of liquid colouring is fine ie 1/2 a tsp but more than that and they won't work so you are going to get a very pale colour. IF that is really all you can get hold of you can boil it to evaporate off some of the water and concentrate it, let it cool and use that.

Hi Draneica, two possibilities, 1. if you have a fan forced oven the fan can effect the back row of macarons, 2. when folding keep scraping down the sides of the bowl and mixture off your spatula because if you have a streak of under mixed mixture through your mix when you pipe it will effect those macarons.

hi myssgerdy, hollow can be because of a drop in oven temp, if you take them out too early or open the oven often to check on them the middles drop when they are not yet done. Or from over whipping the whites and sugar, whip until can turn the bowl upside down and 2 minutes more only.

hi tiffany they can also crack if it has streaks of under mixed mixture, make sure during folding you scrape down the sides of the bowl and the spatula. If htat doenst fix it your oven may be unevenly heated you can get baking tray sthat are double with a gap in the middle that help to even out the heat.

Hi Draneica, I put one tray in at a time in the middle of the oven. If your oven is giving you grief you could try getting a new baking sheet, look for the ones the are double layered with a hollow space in the centre they help even out the heat.

Hi ann, I've been trying this recipe several times. The first few times they came out cracked, even though i banged them on the counter very hard and a lot of times. I tried leaving them out for 20 mins and putting another tray both below and above the macarons while baking(i read that this helps distribute the heat more evenly), and it is better, but i still get several cracked ones around the sides( the ones in the center are usually fine). Another problem i have is the macarons not rising evenly. The macarons would tilt sideways and only have the foot on one side. Do you have any suggestions? I don't want to have to make a whole batch and only be able to use some of them.

Hi Sarah, Every mixer is different so it is easiest to whip until you can turn the bowl upside down and then for 2 minutes more only. This recipe whips more than other recipes but works well

Hi minhuyen vo, hollow shells can be from a couple of things 1.overmixed meringue try mixing until you can turn the bowl upside down and 2 minutes more only. 2. Undercooked centers - if you take them out of the oven before they are ready the inside will drop, the same thing can happen if you open the oven too many times to check on them and the oven temp goes down.

Hi Izzy, are you using a spoon or rubber spatula to fold? Rubber spatula is more gentle so you get more of a chance to fold in those lumps before it is over mixed. If it is running out of the bag it is definitely over-mixed.

Hi Monica Moore, I depends on the size you pipe them, in the size i make then about 20 complete macarons, in a smaller size 3.7cm piped (larger when rapped on the bench) it made 25 whole macarons, or 50 halves

Hi Mel, you dont have to leave them out with this recipe they can go straight in the oven but pipe all of them onto baking paper and bake one tray at a time. I use egg whites straight from the fridge

Hi hannah, If you should be able to make these in 70 minutes, the only difficulty would be getting the ganache filling to set up, place it in a ziplock bag and put it flat in the fridge to cool faster so it is firm enough to pipe.

Hi twentythree84 I have gel colour which is much stronger than liquid colour I use the red and add three drops to make the pink. If you want bright red or blue then you need the powdered colours. Macarons always 'fade' in the oven.

Hi Viriya, It will only become completely flat if the mixture is over-mixed. It should smooth out a little but not become flat. So if becoming flat you need to fold in the almond mixture less times.

Hi hsmfan008, that is because the the cooked uncolored macaron shell is a yellowish brown so adding blue is giving you green. The solution is to add more blue, which means you will probably need powdered colour.

Hi iampureneon, If it is taking an hour to sieve you must be using a very fine sieve, try getting one with bigger holes or the almond meal will take forever to sift. Are you leaving the meringue to sit while you sift? If so sift first. Are you using a rubber spatula to fold? That folds more gently than if you use a spoon.

Hi ciz4claire, if you take it out of the oven when it is not yet ready the inside tends to drop leaving it hollow. Make sure you are using non stick baking paper and leave the oven door closed until you can either smell the pleasant cooked macaron smell or they are a couple of them are just starting to brown.

Hi Julian Uy, just dump all the caster sugar in at the same time as the whites and beat them together.

I had a macaroon for the 1st time a few weeks ago and now they're my favorite desert, can't wait to make & eat these!!!!!
