INGREDIENTS
1 kg aubergines (cut into wedges)
3 tomatoes (halved)
100 ml water
2 Tbsp olive oil
2 green chilies (sliced)
1 small piece of ginger (julienned)
1 onion (sliced)
1 tsp coriander powder
1 tsp turmeric powder
1/2 tsp red chili flakes
1 tsp cumin powder
1 tsp salt
chopped coriander (optional, for garnish)
INSTRUCTIONS:
1. Add the tomatoes, aubergines and water into a pot. Put a lid on and let cook on low heat for about 30 minutes (until the aubergines are completely tender).
2. Mash the aubergines and tomatoes into the pot using a potato masher.
3. Add the oil, green chilies, ginger, onion, all the spices and salt into the same pot.
4. Sauté (bhunofy) until all the liquid has evaporated and the mixture develops a darker color and becomes slightly glossy. It will take about 10-15 minutes on medium low heat.
5. Transfer to a serving bowl. Garnish with julienned ginger and chopped coriander.
