Ingredients:
Pork- approx 2.5 lbs
Sweet or Round Onion- 1 medium to large, sliced
Ginger Root- 3 inches
Garlic- 4 cloves, chopped
Watercress-1 bushel, chopped
Tofu- 1 block medium firm, cut into chunks
Broth or chicken Bouillon-I used better than Bullion 4 tbl sp
Water-If you use bullion go according to directions and adjust to the taste you like. See how strong you want your broth or how watered down. Totally up to you.
Salt and Pepper to taste
EVOO- 2-3 tbl sp

How To:
On medium heat grease the inside of your pot with EVOO, toss in chopped garlic and toss.Add pork, salt and pepper and stir. Cook por on medium heat for five minutes. Add sliced onion and ginger and mix. Time to add chicken broth or better than bullion. I used four tablespoons and four cups of water. Just filled the pot up then added the chopped watercress. Fold in then let cook until watercress is mostly wilted but has a little crunch left to it. Approximately 10 min on medium high. Turn down heat to low and add chunks of medium foil tofu and gently fold. Simmer for five minutes than serve.
