I always like scoring the silver skin instead of removing it. I like the extra crunch it gives. And yes 250 for 5 hours works great and is very easy and never have to babysit. Also 275 for 4 hours works good too! No wrap, no spritz, no sauce, no peek works great for me!

I love your simple is better philosophy, perhaps because it's what I have learned to practice over the years. Just let the food speak for itself.

Great video Shane! Keep It Simple! Your Kosher salt only on the pork butt to this day still blows my mind. No fancy rubs or injections, just like you said here. Meat, salt, and smoke....that's it! I'll be doing my next ribs this way for sure with a coating of the Grilla Beef Rub! Keep the videos coming! 👊👊
