Ingredients and Procedure:
1 cup butter (room temperature)
1 cup sugar
4 eggs ( room temperature)
5 Tablespoon milk (room temperature)
1 teaspoon vanilla essence
1/2 cup shredded coconut
1 teaspoon lemon zest
1 1/2 cup flour
2 teaspoon baking powder
On top:
1 squeezed lemon
2 Tablespoon sugar
Procedure:
Turn on your oven to 350F/ 180C
1. In a large bowl beat in butter and sugar until a creamy batter forms
2. Then beat in 1 egg at a time (not all together)
3. Add in vanilla essence, shredded coconut and lemon zest
4. By using a sifter, sift in flour and baking powder
5. In a greased pan, transfer the cake batter and tap
6. Put it in a preheated 350F/180C oven for 40-55 minutes
7. While it is still warm poke holes in the cake
8. Then by using a brush drizzle the lemon sugar mixture on top, every 10 minutes until finished
9. Cut the cake when it's cooled and enjoy
