Ingredients
300g Sweet potato
40g Unsalted butter
40g Granulated sugar
60g Heavy cream
1 Egg yolk
Baking
Bake sweet potato: 320F (No preheating) for 70-90 mins
Add a roast color: 392F (preheated oven) for 15 mins
*How to make
1. Wrap well-washed sweet potatoes in aluminum foil and bake in an oven at 320F (without preheating) for 70-90 minutes. It's OK if it's soft enough to stick with a bamboo skewer.
2. While still warm, remove the sweet potatoes and put them in a bowl.
3. Add unsalted butter and mash the sweet potatoes with a masher or whipper.
4. When it is loosened to some extent, switch to a rubber spatula, add fresh cream and mix. If you add the cream all at once, it will be difficult to mix, so add it in several batches.
5. Add egg yolk and mix.
6. Transfer 5. to a pan to remove any water and heat on low heat to heat the yolks. Add heat and mix until the sticky dough is smooth and cohesive.
7. Pour into a bowl, divide into 40g pieces and shape into your favorite shape.
8. Mix egg yolk and mirin to make a coated egg, and apply with a brush to the entire surface of 7.
9. Once dried, brush again and apply the egg over the entire surface.
10. Bake in an oven preheated to 392F for 15 minutes to give it a brown color.
