I made this last night with frozen sweet potatoes. My store was out of butternut squash. Totally worked! I served it over green beans, corn, and black beans. Eating for days! 😎

I always chop two onions. One for whatever I’m cooking and one to go into the freezer for those nights when I have less time or less energy for cooking. Trying this recipe tonight. I don’t have an instant cook pot so adapting for my stove top.

I just made mine and put it in the instant pot and I’m excited to try it. I got your five day meal plan and followed that recipe. However, it had the number of cups of water left blank so I wasn’t sure how much water to use which is why I turned to the video. It called for 5 cups of soy milk and zero water. I noticed that you did 5 cups of water in the video and one cup of soy milk so we will see how mine turns out. I love your channel you’re my favourite cook. I tried the ziti a few days ago and absolutely fell in love with it. Your tip about prepping the spices in the smaller jars is genius.

Reebs and Dillon - we had a fantastic red lentil dahl dinner tonight. Since it's against my religion to actually follow a recipe, I had to make a few small changes but this was a great idea and Richard and I loved it. I happened to have two bags of the exact same frozen squash you used because I was going to experiment with it to make some of my cheezy sauce. And I always have pounds of red lentils on hand. So I was set to make your dish. I did add a bag of frozen corn and I used dried galangal powder and fresh ginger and I increased the amount of some of the spices and I used 3 sweet onions because I can never have too many onions. We had some brown basmati rice already cooked up, so we had our dahl over rice. Wonderful!! We finished off the rice tonight so we'll cook up some oat groats in the morning and have red lentil dahl for our late-morning "break fast", too. Thanks guys!!

Yum! I made this tonight using fresh onion, fresh butternut pumpkin (in Australia here), and I added a few cubes of frozen spinach. I also added a small handful of sultanas because I can't get your date powder! So glad it made a big batch, I'll be eating leftovers for lunch for the next few days 😋

How long did you cook on the stove and did you use the whole 5 cups water? I don't have an instant pot and am in the learning phase of cooking vegan.

@@jbell9179 I sautéed onions then added fresh squash, coated with tomato paste and seasoning, added liquids and lentils - brought to a boil, lowered heat to simmer and cooked til squash and lentils cooked - I don’t think it was more than 30 or 30 minutes. I gave it a mash when done! I think I may use less water next time - perhaps 4 or 4 1/2 cups of water. Good luck!

Can I use a crock pot instead? Are all those seasonings necessary. Also, what kind of rice. I cannot imagine you would eat white or basmati. Thanks

Hi Debra, it is possible, but we have not tried it. Some recipes say on high for 4 hours or on low for 8 hours! You can put as much or as little seasoning as you prefer. We usually opt for brown rice with our recipes! Hope that helps!

I have never had an issue with the burn warning in my 6 qt, but every time I cook red lentils in my 8 qt I ALWAYS get the burn warning.

Instant Pots can get tricky with those burn warnings! There are so many different ways that you might get it, you truly never know!

I made this recipe & had to donate it to the compost (WAY TOO MUCH liquid, not enough spices). Liquid to lentil/spices measurements is way off!! Please adjust so that we can enjoy this easy, dump & go Instant Pot recipe!!
