A homage recipe to my all my Irish friends as St. Patrick’s Day approaches.
It is said that everyone is a little Irish on St Patty’s day; except the Polish…we stay Polish - I digress. There is nothing better than the Irish flavors of corned beef, Swiss cheese, Sauer kraut, and an amazing dressing all pulled together for the popular Reuben. However, try not to cry because there will be no rye!
That’s right…we are keeping the 50 by 50 going full steam ahead and keeping those carbs low and protein high and kicking that rye bread to the side!
Today is Mike Oski’s Kitchen, we are making: a Reuben Casserole Bake!!!!!
This one has all the wonderful flavors of the Reuben but without the carb guilt. I have to say, this might be one of my favorite casseroles. I will even show you how to make your own dressing and cut the cabs even more.
What better way to celebrate St. Patrick’s Day with this super simple dish. If you have a half hour on your hands…just go ahead and make this. You will love it and your crew will think you are a star! I’ll say it again…“I will not sacrifice flavor and taste not matter how healthy a dish!”
