• Ingredients
[ Mille-feuille ]
□ frozen puff pastry dough sheets
□ sliced almonds
□ sugar/powdered sugar
[ Crème Patissiere(Pastry Cream) ]
□ 3 egg yolks(50g)
□ 40g granulated sugar A
□ 220g milk
□ 10g granulated sugar B
□ 1/2 to 1 vanilla bean
□ 20g cake flour, sifted
□ 8g unsalted butter
[ Crème Chantilly(Chantilly Cream) ]
□ 150g heavy cream, cold
□ 12g granulated sugar
□ 2g cointreau(rum), optional
□ fresh strawberries

• Before you start
- Take your butter out of the fridge at least 30 minutes before using.
- Preheat oven to 395°F/200°C.
• Notes
- Since moisture comes out of strawberries, eat them immediately after completion.
- The amount of completed Diplomat Cream (Creme Patisserie + Creme Chantilly) is quite generous. :)
