Ingredients
1 cup roughly chopped spinach leaves
2 Tbs diced onion
½ cup shredded cheese
2 eggs
2 Tbs milk
salt and pepper to taste
Directions
Step 1-
First, dice few slices of onion and roughly chopped spinach. Set aside.
In a bowl, beat the eggs, milk and stir in salt and pepper.
Step 2 -
In a skillet add little oil and sauté onion till translucent over medium heat. Next add spinach cook for another minute. Pour egg mixture over onion and spinach, tilting the pan to spread it evenly. Let egg cook until firm. (Don’t overcook the eggs.) Remove skillet from the heat, sprinkle the one half with the shredded cheese and with a spatula gently fold the omelet in half. Cover it and let cheese melt for minute or two. Serve immediately.
