This bread is so delicious and easy to make. With a short 1 1/2 hour rise time this bread comes together quite quickly.
Potato Bread Recipe
Ingredients:
2 Potatoes - amzn.to/4cfkkpG
2 TBS Granulated Sugar - amzn.to/4ckVsN5
2 1/4 tsps Active Dry Yeast - amzn.to/3VDRsBS
4 Cups Flour - amzn.to/3yZUEPy
1/4 Cup Vegetable Oil - amzn.to/4b0tzsR
1 tsp Salt
Equipment:
Bread Pan - amzn.to/3KEKRAO
Cooling Rack - amzn.to/3xf409w
Directions:
Peel 2 potatoes and cut into small pieces. Bring to a boil and cook until soft.
Drain potatoes, place in bowl and smash. Let cool.
In a separate bowl combine a cup of warm water.
Stir until sugar is dissolved.
Once the sugar is dissolved sprinkle on 2 1/4 tsps active dry yeast. Set aside and wait 5 minutes.
In a separate bowl combine 2 cups flour, cooled potatoes, yeast mixture, 1/4 cup vegetable oil and 1 tsp salt.
Stir until combined.
Knead in between 1 1/2 to 2 cups flour a 1/2 cup at a time. I only used a total of 3 1/2 cups for the video.
Move bread dough to floured surface. Knead for approximately 5 minutes. You will know you are done when your dough is smooth and elastic.
Form into a ball by folding the sides one at a time. (see video)
Cover and let rise for an hour. Your dough should double in size.
Place dough on a floured service and punch down dough. Knead for an additional 2 minutes and shape into a loaf.
Place formed dough into a bread pan. Cover and let rise for 45 minutes. You will know it is ready when you dough has risen just above your bread pan.
After 30 minutes, preheat oven to 375 degrees.
When bread is done rising place in oven and bake for 30 minutes.
Remove bread from oven. It should be golden brown. Roll bread directly onto a cooling rack immediately after removing from the oven.
Let your Potato Bread cool completely before serving.
