Yield: 7-8 Servings
Cook Time: Approx. 1hr/25mins
Seasoning of Chicken: 30mins
Ingredients
4 large Chicken Leg and thigh cleaned ( with skin on)
Seasoning/ Marinade
4 Tbsp. Chopped Green Onion
4 Tbsp. Sugar
3 tsp. All Spice
1 tsp. Black pepper
3 Garlic Cloves Chopped
1/2 Cup Ginger
1/4 Cup Dark Soy Sauce
1/2 tsp. Salt
3 Tbsp. Rice Vinegar
1 tsp. Hot Sauce (optional)
3 Cups Water
1/4 Cup Oyster Sauce Optional
Oil for deep Frying
Marinade
1. In a pot add all ingredients except (Oyster Sauce Oil and Chicken).
2. Bring to a boil.
3. Add Chicken thighs
4. Cook on each side for 8 Minutes
5. Remove from pot, place on a paper towel, and leave the stock for later.
6. Heat Oil in a Deep Frying pan or Deep fryer.
7. Place Chicken Pieces to fry skin side down for 8 Minutes on each side at medium heat.
8. Remove and Place on fresh paper towel to remove excess oil.
9. Shop into pieces and set aside.
Sauce:
1. Reduce the Marinade stock from the steamed chicken.
2. Add Oyster sauce stir, and skim.
3 Serve with your delicious Chinese style chicken.

Pre heat oil in pot to 350 degrees F.
Once oil is hot, add seasoned chicken.
Allow to fry until chicken is golden brown.
When chicken is golden brown, remove from oil, place on baking tray and into oven.
Let cook in oven for 40mins.
Using a food thermometer, check internal temperature of chicken. (Internal temperature should be over 165℉)
