Geoff, bread! excellent. I have a question a professional chef might be able to answer. Yeast- its 2 1/4 tsp for a 1lb, 2lb & 3lb dough weight. At what point - say I wanted to make 8 1lb loaves, do I increase the yeast? I have a standard loaf pan, a large loaf pan and a large pullman. same yeast in each recipe.

Hi T W. The amount of yeast can be as little as 1/4 tsp for a single 2lb loaf or more depending on several factors. But the amount of yeast you use will impact the flavour of the bread as well as how fast it rises. For instance 1/4 tsp in 500g of flour will work if the dough is left to proof for a long time, like 18 hours. However the flavour profile will not be the same as if 2 1/4 tsp of yeast was used and the proof was only for an hour or so. The important thing is that however much yeast you use you need to leave the dough long enough for it to proof/rise fully. Less yeast means more time to proof/rise.
