INGREDIENTS
• 2 cans black beans, rinsed
• 1 package of frozen corn, thawed or 3 fresh corn ears
• 2 red peppers, chopped
• 1 avocado, cubed
• 1/3 cup olive oil
• Juice of 4-6 limes
• 1 shallot, chopped
• 1 tsp cumin
• Cilantro
• Salt and pepper to taste
DIRECTIONS
1. Mix beans, corn, pepper, and avocado.
2. In separate bowl, mix oil, lime juice, shallot and cumin.
3. Pour dressing over salad, add cilantro and salt and pepper.
