The Australian guy knows!. Coffee is a hit or miss, make sure you go to a specialty coffee place to get the best coffee. Havanna aljafores are great but Cachafaz and Guolis are very good too.

Hi Slainte, thanks for watching! :) I actually just left BA a couple days ago! But when I go back, I'll make sure to try Temple. I do remember seeing it, but never went. We actually got both the alfajores in the Mercado San Telmo. The maicena one from a pastry/dessert shop, and the clasico we did get from Havanna. Hope you enjoy your time in BA too! :)

Hey Owen! I don't remember the exact price, but I'm pretty sure it was around 1200 pesos ($6 usd). Usually the going price for steak at a parrilla is anywhere between 1000-1500. Plus wine and the provoletta. I think the total for the table was around 4000 pesos or so ($20 usd, based on the dolar blue exchange).

The way he prepared the mate is not the right way, the way he prepared it, the water covers over the yerba and it gets washed too quickly. When you prepare it it is fundamental that when you flip it over and get rid of the dust in the yerba you also create a bit of an angle in the yerba and build like a little mountain with it and therefore there will be an empty space about half, inside the mate. Then you need to pour a little bit of cold water inside the part of the mate where you have the hole and let the mate rest as the yerba sucks up the cold water and swells up. After a few of minutes, you then insert the bombilla making sure that you place it straight down where the hole is and shift it under the mountain of yerba in a movement so that the top of the bombilla rests against the top curvature of the mate, after this, you never move the bombilla again. You then pour the hot but not boiling water always against the bombilla and fill the hole but never over the top of the level of the yerba. The first fill will always be a bit nasty since it will be luke warm and bitter. Also, if you do it properly, you will see that after you pour the hot water you will produce like a bubbly creation with the hot water. If you do it this way you will asure that the yerba doesn't get washed quickly and you can make the mate last longer with flavor.

The medialunas are a derivation of the French Croisants. We also like very much the French bread type. The "facturas" which are differente sweet rolls and buns have diverse names created by the anarchist bread and pastries manufacturers. One is called "vigilante" (policeman), "bolas de fraile" (priest male private parts), Sacramento (Sacrament). They wantedd to be unrespectful of the different political and religious autorities at that time. It's not mate team, but mate kit (stritly: matera (a special bag to keep the thermos straight, the thermos, the mate, the bombilla, yerbera (pot for yerba) and azucarera (pot for sugar)). With all that and hot, never boiled, water in the thermos, you are ready to prepare a mate in any place you need or want to drink a mate. Good explanation of the "rite" of the mate, and congratulations, first person I see that doesn't touch the "bombilla" to drink the mate. I've seen to many people holding the bombilla as it should jump and run away, or worse, moving the bombilla in the mate. Most people don't put any sauce on the grilled meat, as chimichurri and salsa criolla are mostly used in choripan (pork or cow spiced saussage in a sandwich). In grilled chicken, and "matambre" (meat of the belly of the animal, cow or pork) we usually add lemon juice. Provoleta is a slice of Provolone cheese with orégano and may be a little hot The most traditional alfajores are three: the alfajor de maizena where the two biscuits are made with corn starch instead of weat. The other two are the "alfajor de chocolate" with two biscuits joined with dulce de leche (milk jam, not caramel) and covered in chocolate, or de "alfajor de dulce de leche" which has the biscuits joined by dulce de leche but is covered in sugar or meringue. In some regions you may the local alfajores with fruit jam instead of dulce de leche, or with different biscuits. The best brands are Havanna and El Cachafaz. Alfajores are the best snack you can eat when you want to rest for a moment during your visits. And two alfajores make a good meal at tea time. There is a difference between tostada and tostado. As an adjetive mean only the femenine and masculine of toasted, but as a nown, the tostada is a slice of bread toasted, but the toastado is special sandwiche called "sandwich de miga" which is a very thin sandwich of ham and cheese, which has been toasted. With one glass of orange juices is a great "merienda" or breakfast.
