One of the things I’ve always loved is how you always explain in the original Vietnamese terms as well not just the English names of dishes for us to understand. One of the little things you’ve always done that is very appreciated! Great video

@@yeschefwithchadkubanoff And it's a good idea to say the Vietnamese name because of the confusion on things like spring rolls/summer rolls/salad rolls/rice rolls...no one knows anymore if it's the fried or fresh version in English. But if you say goi cuon or cha gio or nem ran, you know which version immediately. If Westerners can learn to say pho and banh mi, they can learn to differentiate between the fried or fresh versions of the spring/summer rolls.

nem chua is just fermented seasoned raw pork with fish sauce, salt, sugar, chopped garlic, combined with thinly julienne boiled pork skin in it for binding and for crunchy texture. all the ingredients use in bánh cuốn are originated from the north except for bánh cống, which is originated from the south. this is the northern dish. in the north they add waterbug essence or real waterbug. it adds a unique musky smell to it.

I used to eat banh cuong banh nuong for breakfast in an alley when I was little living in Vietnam in District 10. The way you ate it reminds me of myself hahaha. It was surprised that you like it. Here we are only eat it for lunch or to go for dinner.

If you confuse which kind of chả is it, you can guess by the shape it is served Chả lụa: semi-circle Chả chiên: circle Chả quế: rectangle So in the first vendor, as I see, they only have chả chiên and chả lụa, while in the second vendor, it also had chả quế Chả chiên is fried chả lụa, chả quế is added cinnamon

When I was in Vietnam I dedicated a whole day eating banh cuon/uot, it's such a versatile dish and super easy to eat.. its seriously so good and I throughly enjoyed it, the egg version is something new I haven't eaten but willing to try it out.. I love D4 😊

In the Northern region of Vietnam, the taste of “Nem chua” is significantly different from the Southern version. The Southern Vietnamese prefer eating sweat stuff, so they make Nem chua sweet and sour, however, the Northern Vietnamese would find Nem chua spicy because they just prefer salty and spicy food in general. Sometimes actually, it makes Northern and Southern cuisine different, because our taste is different base on region.

I rolled on the floor laughing when you said TÔN ĐẢN was your favorite street. Surely you meant it as a joke. Because it used to be one of the deadliest streets in Saigon in a not too distant past. The most fearsome mafia gang was headquartered there.

Chad since you're living in Vietnam. You should ask them why do all the neighbors like to sell the same products. ANd how do they make money if they're all competeting for the same customers? I just don't understand that about the Vietnamese culture lol.

I ALWAYS question that as well and am always complaining to my SIL who came from Vietnam why this is so. It's the same as all the nail salons in the West...one Viet person does it and now everyone has a shop on the corner. It's like differentiate yourself to stand out. Either that or everyone just stays poor together.

@@Iamtongue In Vietnam, there is a saying: Buôn có bạn, bán có phường (If you want to trade, you'll need partners. If you want to sell something, you need an alliance). Therefore when people open a shop, they will tend to stick together. As the neighbor are rivals in the business, they are also allies in attracting customers. If your crow of shops is big enough, It will become a signature thing: If people wanna buy or eat something, they will go to your blocks (or road) rather than go to another area that is further from their place. And you don't have to worry about competition that much, even if you sell exactly the same things. Most of the stores in that form of the alliance are usually relatively small, so one shop can't hold too many customers simultaneously. People will choose another shop if they need to wait in line or feel uncomfortable being served in a dense crow.

In the north, there are Hanoi style, Ha Nam style, Hai Phong style and Ha Giang style of banh cuon. You should try them. They are very different from southern syle. My favorites are Ha Nam (Phu Ly) and Hai Phong style of banh cuon. The dipping sauce is just on another level.

In my opinion, the 1st place is better because they use less tapioca flour, and their sausage is now chewy. Chewy sausage usually means they mixed flour or something in to save cost. Also the banh cong is not supposed to be all rice flour, it should have a mixed flour.

surprisingly, the banh cuon stall inside the ben thanh market is super good, it is more expensive, but the banh is really thin and super delicate, it's on another level.

Cha Chien originated from the mien trung area, specifically from Hue or Da Nang . That is where you will find most cha chien incorporated in the dishes !

Its Banh CUỐN not Banh CỐNG my friend. Chả Chiên might be the southern name for Chả quế (meaning Cinamon sausage) called in the north. We eat it alot in Hanoi.. every sausage shop has it.. so I think its origin is Hanoi.. or the famous sausage village named Ước Lễ in particular .. where all the best sausages come from.

Cái bánh ăn kèm cùng dĩa bánh cuốn đó là bánh cống (2:23). Bánh đó là 1 loại bánh chiên có nguồn gốc miền Tây mà trong Nam khi ăn bánh ướt/ bánh cuốn sẽ ăn kèm. Chứ ko phải gọi sai bánh cuốn thành bánh cống. Google bánh cống để rõ hơn.

To me, banh cuon is WAY better than banh uot. I think banh cuon is the northern style whilst banh uot is southern style. The cinnamon cha (cha que) is from the north, but I think you also ate a fried cha (cha chien). I know Max and Chris love the cha que when they are up in Hanoi.
