This triple-layered sandwich is packed with creamy avocado, savory scrambled eggs, crunchy veggies, and a touch of cheese, making it a satisfying and flavorful meal.
Ingredients:
6 slices of sandwich bread
1 ripe avocado, sliced
2 eggs, scrambled
Salt and pepper to taste
1 spring onion, chopped
1 teaspoon mayonnaise
2 slices of lettuce
2 slices of Tomato
Grated carrot (about 1/4 cup)
Grated red cabbage (about 1/4 cup)
Butter, for spreading
2 slices of cheese
Instructions:
1. Prepare the Avocado:
Cut the avocado in half, remove the pit, and slice it thinly.
2. Cook the Eggs:
Crack the eggs into a bowl, season with salt, pepper, and chopped spring onion, and whisk together.Heat a pan over medium heat, add a bit of oil or butter, and pour in the egg mixture. Scramble the eggs until they are fully cooked.
3. Assemble the Sandwich:
Spread butter on one side of each slice of bread.On the first slice of bread, layer the scrambled eggs, grated carrot, grated red cabbage, tomato & a slice of lettuce.
Place the second slice of bread on top, then add the sliced avocado and a slice of cheese.
Top with the third slice of bread to complete the sandwich.
4. Finish and Serve:
Wrap the sandwich tightly in wax paper or foil and cut it in half.
