Preferment dough
50g all-purpose flour
0.8g yeast (about 1/4 tsp)
1/4 tsp sugar
Main dough mixture:
All prefermented dough
2 eggs, separate yolks and whites
50-60g sugar (1/3 for the yolk, 2/3 for whipping the white)
1/2 tsp baking powder (2.5-3g)
1/2 tsp vanilla flavor
1/3 tsp salt
30g melted butter
60ml milk
70 g cake flour
Main dough after mixing, let rest for 30 minutes.
Prepare the topping, preheat the oven, beat the egg whites
Beat 2 egg whites with 1/4 tsp salt, 1/4 tsp lemon juice or vinegar + 2/3 amount sugar left over.
Baking time : prebake the dough for 7 minutes at 180 grad celsius . Add topping bake for another 9-10 mins. (Muffin cup cake mold size )
