I made Vietnamese egg coffee today,
When I traveled to Hanoi a few years ago, I had a very delicious coffee at 'Cafe Giang'.
Basically, making it is similar to frothy coffee,
But it's made from eggs, so it tastes softer and creamier.
When I drank this in Hanoi, I could hardly feel the fishy taste of the eggs,
I thought it was made by heating eggs like sabayon sauce
But a few days ago, I watched a video of making coffee at Cafe Giang on KZitem, where there was no heat on the egg.
If you are not very sensitive to the smell of eggs, you will enjoy it.
▶ Ingredients (1 cup of coffee)
2ea Egg yolk (about 40g)
2Tbsp Sugar (about 30g)
2tsp Instant coffee powder (about 2.5g)
1 / 2cup Hot water (approx. 120ml, depending on taste)
* Some tips that don't fail egg coffee
1) Egg yolk is prepared at room temperature (if it is cold, foam is made very slowly)
2) Add enough sugar
(Add at least 30g of yolk 40g. If the amount of sugar is small, foam is not sufficiently made.)
3) Whip enough until the color is very bright yellow (less air trapping can give a lot of fresh yolk taste and smell fishy)
4) I recommend you use a hand mixer. (It takes only 1 minute to whip a narrow and deep cup with one hand mixer blade)
